The way it works is he sets a collateral comparable to the value of the cargo, you accept the contract and pick it up at his station, then haul it to the station he designated and then mark the delivery as completed.

It won't appear in his assets if the contract is still being handled by you, it will stay in your assets. If you lost his cargo, you don't have to pay him anything.
